Made entirely from St. Laurent grapes, this wine pushes the boundaries of natural winemaking while staying true to its Austrian roots. The 40-year-old vines, planted in 1982, produce fruit that thrives even in difficult vintages, offering remarkable depth and complexity.

This is a rosé with structure and soul. The nose is floral and earthy, with dried violets, sour cherries, and red berries, underpinned by a distinct stony minerality. On the palate, the wine is vibrant and textured, showing silky tannins, fresh acidity, and a balance of sweet berry fruit with subtle earthy tones. The mouthfeel is both refreshing and serious, making it a perfect bridge between red and rosé styles.

Winemaking is key to Numen Rosé’s unique character. The grapes undergo semi-carbonic maceration for six months in traditional Georgian Kvevri—large clay vessels buried underground. This ancient method enhances the wine’s purity and allows for gentle extraction of flavors and structure. After fermentation, the wine spends four months aging on the lees in 500-liter acacia wood tonneaux, adding complexity and depth. The final wine is bottled unfined and unfiltered, with only a tiny addition of sulfites (25 mg/L) to maintain stability.

Pair this wine with grilled radicchio tardivo, onglet with cherry jus, or cod with cocoa bean slivers. Its layered complexity and fresh acidity make it a versatile partner for bold and umami-rich dishes.
