Johannes Zillinger’s Numen Riesling 2021 is a wine that redefines what Riesling can be. Made with minimal intervention and biodynamic farming, it has depth, texture, and complexity that make it a truly unique expression of Austria’s famous grape.
The nose is vibrant and layered, with aromas of apricot, lime, and a hint of smokiness. On the palate, it is structured and mineral-driven, offering bright citrus, stone fruit, and a fine saline finish. The texture is unlike that of a conventional Riesling—it’s richer, more expressive, and carries a subtle grip from skin contact fermentation.
The winemaking process is key to its depth. Zillinger employs a short skin maceration in amphoras, allowing the juice to extract fine tannins and complexity. The wine is then pressed slowly and gently, preserving its purity. To add freshness and a dynamic character, 10% whole berries are added toward the end of fermentation. Afterward, it is aged for 14 months in 600-liter oak barrels, resting on its lees and whole berries. The result is a Riesling with incredible structure, length, and a natural vibrancy.
Pair this wine with bold, umami-driven dishes. Think duck dim sum in Szechuan pepper consommé, a rich orzotto with mountain cheese and mushrooms, or smoked eel with scrambled eggs, chive oil, and avocado. The combination of bright acidity, textural depth, and slight tannic grip makes it a versatile food wine.
