Ideal Tinto 2021 is a meticulously crafted red blend from the Senhorim sub-region of Dão, sourced from vines aged between 30 and 60 years. This wine brings together classic Dão varietals: Touriga Nacional, Tinta Roriz, Alfrocheiro, and Jaen, each contributing to its layered complexity. The vineyards, situated at elevations ranging from 400 to 700 meters, are rooted in granite-rich soils, imparting a distinctive minerality and freshness to the wine.
The grapes underwent a manual harvest in September, ensuring optimal ripeness and integrity. Post-harvest, they were carefully transported in 15 kg boxes to preserve their condition. Fermentation occurred over six weeks in temperature-controlled stainless steel vats, facilitating a slow and steady extraction of flavors. Following this, the wine underwent malolactic fermentation in French oak barrels from Burgundy (Puligny-Montrachet), where it matured for 22 months. This extended aging period in carefully selected barrels allowed for the development of nuanced aromas and a harmonious integration of oak influences.
In the glass, Ideal Tinto 2021 presents a vibrant ruby hue with notable concentration. The nose is both youthful and complex, offering an array of black pepper, ripe red berries such as raspberry and cherry, and subtle smoky undertones from the well-integrated oak. Hints of wet stone further accentuate its mineral character. On the palate, the wine exhibits a robust structure balanced by elegance and finesse. The tannins are finely woven, complemented by a lively acidity that propels a long, satisfying finish, suggesting significant aging potential.
This versatile red pairs excellently with spiced dishes, pepper steak, red meats, and game. For vegetarian options, consider dishes featuring root vegetables like turnip, sweet potato, and beetroot, or legumes such as chickpeas, beans, and peas. It also complements a variety of cheese-based dishes. Notably, Ideal Tinto 2021 is suitable for both vegans and vegetarians.
The Carlos Raposo Ideal Tinto 2021 has an alcohol content of 13%, with a pH of 3.8, total acidity of 5.3 g/L, and volatile acidity at 0.6 g/L. Free sulfur dioxide at bottling is kept under 10 mg/L, and total SO₂ measures 64 mg/L, indicating a low-intervention approach in line with the producer&s philosophy. The wine is bottled in a limited run of just 5,000 bottles (0.75L), underscoring its small-scale, precision-focused production.
James Suckling awarded it an impressive 94 points, noting its aromatic richness and structural balance. Additionally, Jancis Robinson rated a previous vintage 17.5 out of 20, highlighting its complexity and aging potential.
